<p>Last week the formerly-Orlando based Kana Cuban Coffee Roasters moved into offices at the WineStyles headquarters in Margate and leased a nearby warehouse for their roasting operation as the company joined with Spuck to grow their brand in a region with a deep love for Cuban coffee.</p>
<p>Moving back to South Florida is something of a homecoming for the three men behind Kana as CEO Troy Lee, creative marketing manager Chris Neetz and roaster Adam Daggett all grew up in the Miami area and expect to find a larger local market for the product.<span id="more-466"></span></p>
<p>Spuck, whose company is behind the Salad Creations and Rotelli Coffee franchises, as well as the national WineStyles chain of stores, discovered the coffee a few months ago and, while working the business side of the brand, now drinks Kana exclusively and is slowly getting his friends to do the same, he said.</p>
<p>Having closed the deal for Kana in less than a month, he said they expect the coffee to grow quickly as it is already in a few Fresh Market locations and a couple of Cuban cafe&#8217;s in Miami, as well as spreading its way through the offices of the Tampa-based Sysco food distribution company.</p>
<p>&#8220;We&#8217;re excited about it,&#8221; Spuck said. &#8220;It&#8217;s a little bit different and it has its own shtick.&#8221;</p>
<p>Neetz said the imagery on the coffee bags – a mix of classic 50s Cuban imagery and bright pop art coloring – is intended to cause an automatic identification of the product, as though it&#8217;s something customers already know even if they don&#8217;t, he said.</p>
<p>The other thing that Neetz points to as being distinct to the Kana coffees, of which there are nine roasts, is the small batches they roast beans in. This attention to detail also results in coffee that he said can be used both for espresso or as a regular drip coffee.</p>
<p>&#8220;It&#8217;s a science,&#8221; Neetz said. &#8220;No, not just a science, it&#8217;s a passion. We pride ourselves on innovation and pushing ourselves – it&#8217;s a big aspect of what we do.&#8221;</p>
<p>After becoming the official coffee of Silverwood Theme Park in Idaho, Neetz said the company started getting calls from all over the country and from a wide variety of people, which only showed them how much farther of a reach the coffee could have.</p>
<p>&#8220;It really spoke to the fact that anybody can relate to it,&#8221; Neetz said, &#8220;and now we&#8217;re starting to get ourselves into a lot of areas.&#8221;</p>

<p>It is not sipped or savored … it is shot! Cafe cubano is at-least double the strength of American coffee. It is a daily morning ritual for Cubans and Cuban-Americans. At any time of day or night at the countless little Cuban restaurants that dot Miami, people line up for &#8220;jolts&#8221; of café cubano served in thimble-sized paper cups. Cuban coffee is served at the end of a meal in tacitas (tiny cups) that are smaller than demitasse cups. The old-fashioned way to make café cubano is in a pot on the stove, though the truth is that Cubans in this country often make their coffee in Italian espresso makers. The tutorial below will use a Stovetop Espresso pot.</p>

<div id="_mcePaste" style="position: absolute; left: -10000px; top: 0px; width: 1px; height: 1px; overflow-x: hidden; overflow-y: hidden;">Unscrew the Italian espresso maker and remove the metal filter cup from the bottom half. Pour ice cold water into the bottom of the espresso maker up to the bolt located on the inside.</div>
<div id="_mcePaste" style="position: absolute; left: -10000px; top: 0px; width: 1px; height: 1px; overflow-x: hidden; overflow-y: hidden;">Position the metal filter cup back into the bottom half and tamp very tightly with coffee grounds, leveling it off at the top. Screw the espresso maker together and place on a hot burner (high heat). While keeping an eye on the espresso maker, take a metal cup and pour about one teaspoon for each tacita.</div>
<div id="_mcePaste" style="position: absolute; left: -10000px; top: 0px; width: 1px; height: 1px; overflow-x: hidden; overflow-y: hidden;">A typical stovetop espresso maker makes four tacitas, but they are available in as small as two (for the lonely Cuban bachelor) and as many as eight and up (for Noche Buena &#8211; the family Christmas Eve dinner). As the first trickles of coffee percolate, pour enough to moisten the sugar in the metal cup. Vigorously mix the moistened sugar and coffee until it becomes a light paste.</div>
<div id="_mcePaste" style="position: absolute; left: -10000px; top: 0px; width: 1px; height: 1px; overflow-x: hidden; overflow-y: hidden;">In the meantime, take the espresso maker of the heat once the top portion is about 3/4 of the way full. This will prevent it from burning and/or overflowing onto your stove. Once the coffee is done, pour it slowly into the metal cup while gently mixing it with the sugar paste. If done properly (and yes … it does take practice and a special touch), the sugar paste will create a &#8220;foam&#8221; once it is mixed with the rest of the coffee. Pour into tacitas or demitasse cups … and shoot!</div>

<div id="_mcePaste" style="position: absolute; left: -10000px; top: 0px; width: 1px; height: 1px; overflow-x: hidden; overflow-y: hidden;">Café cubano&#8217;s quieter cousin, café con leche should be called leche con café for it really is milk with coffee. A steaming cup of this sweet, comforting potion served with toasted bread or cuban crackers is a typical Cuban breakfast.</div>
<div id="_mcePaste" style="position: absolute; left: -10000px; top: 0px; width: 1px; height: 1px; overflow-x: hidden; overflow-y: hidden;">Heat milk in a pot. Café con leche is usually made with whole milk, or a mixture of whole and evaporated milk, but any milk will do &#8211; dare I say, even soy. Sorry Abuelita (Dear Grandmother)!.</div>
<div id="_mcePaste" style="position: absolute; left: -10000px; top: 0px; width: 1px; height: 1px; overflow-x: hidden; overflow-y: hidden;">Pour the hot milk in a mug, filling it almost to the top. Throw in a tacita of café cubano and stir. Sit back, pop in the Buena Vista Social Club CD and feel the warm Gulf breeze.</div>

<p>Position the metal filter cup back into the bottom half and tamp very tightly with coffee grounds, leveling it off at the top. Screw the espresso maker together and place on a hot burner (high heat). While keeping an eye on the espresso maker, take a metal cup and pour about one teaspoon for each tacita.</p>
<p>A typical stovetop espresso maker makes four tacitas, but they are available in as small as two (for the lonely Cuban bachelor) and as many as eight and up (for Noche Buena &#8211; the family Christmas Eve dinner). As the first trickles of coffee percolate, pour enough to moisten the sugar in the metal cup. Vigorously mix the moistened sugar and coffee until it becomes a light paste.</p>
<p><img class="alignleft size-medium wp-image-426" title="load-portafilter" src="http://strategy.kanacubancoffee.com/wp-content/uploads/2009/11/load-portafilter-300x227.jpg" alt="load-portafilter" width="300" height="227" />In the meantime, take the espresso maker of the heat once the top portion is about 3/4 of the way full. This will prevent it from burning and/or overflowing onto your stove. Once the coffee is done, pour it slowly into the metal cup while gently mixing it with the sugar paste. If done properly (and yes … it does take practice and a special touch), the sugar paste will create a &#8220;foam&#8221; once it is mixed with the rest of the coffee. Pour into tacitas or demitasse cups … and shoot!</p>
<h2>Cafe con Leche (Cuban Coffee with Milk)</h2>
<p>Café cubano&#8217;s quieter cousin, café con leche should be called leche con café for it really is milk with coffee. A steaming cup of this sweet, comforting potion served with toasted bread or cuban crackers is a typical Cuban breakfast.</p>
<p>Heat milk in a pot. Café con leche is usually made with whole milk, or a mixture of whole and evaporated milk, but any milk will do &#8211; dare I say, even soy. Sorry Abuelita (Dear Grandmother)!</p>
<p>Pour the hot milk in a mug, filling it almost to the top. Throw in a tacita of café cubano and stir. Sit back, pop in the Buena Vista Social Club CD and feel the warm Gulf breeze!</p>
